How to change up this recipe

You can change up this casserole in a couple of different ways. Make it using this recipe the first time and then try some of these ideas later on.

  • Use BBQ Sauce: Swap out the ketchup for BBQ sauce, it makes a fun bbq flavor casserole!
  • Add cheese: Top the cornbread with cheese in the last five minutes of baking for a cheesy change-up.
  • Add veggies: You can add corn or diced potatoes to the filling while cooking it on the stove-top.
  • Add beans: Drain a can of baked beans or other beans and add it to the filling before topping it with the cornbread mixture.
  • Serve it: Serve it with sour cream or shredded cheese for garnish and fun.

Equipment

  • 9×9 Baking Pan

Ingredients

Filling

  • 1 lb lean ground beef
  • ½ yellow onion diced
  • ½ green bell pepper diced
  • 2 cloves garlic minced
  • 8 oz. tomato sauce
  • ½ cup ketchup
  • 2 Tablespoons brown sugar
  • 1 Tablespoon yellow mustard
  • ¼ teaspoon pepper optional
  • ½ teaspoon salt optional

Topping

  • 1 cup cornmeal
  • ½ cup all purpose flour can also use a gluten-free flour mix – works great!
  • 1 Tablespoon granulated sugar
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 egg
  • 2 Tablespoons oil
  • ¾ cup milk

Instructions

  • Preheat oven to 350º
  • Brown ground beef with onion and bell pepper
  • When beef is mostly brown, add garlic, and continue cooking another 90 seconds

  • Drain beef if needed before proceeding
  • Add tomato sauce, ketchup, brown sugar, mustard, and salt and pepper

  • Stir well, and simmer until sauce is reduced and thickened – about 5 minutes

  • While beef cooks, Combine cornmeal, flour, sugar, baking soda, and salt together
  • Whisk egg, and add to cornmeal along with oil and milk

  • Stir mixture until no longer lumpy
  • Pour beef mixture into an 8×8 or 9×9 inch baking pan

  • Top with cornbread mixture

  • Place in oven and bake for 30  minutes until cornbread is golden around the edges, and done through.

Notes

Note: If you’re using an oven safe skillet, you can just add the cornbread topping to the skillet to bake rather than using a separate pan. I would suggest an 8-10 inch skillet for this size of batch.
