What You Need To Make This Beef Bourguignon

Add this recipe to your meal plan and shopping list so you’ve got everything in advance. (don’t have one? grab mine for free!) Having everything all on hand means you can just toss it together and not have to run back to the store.

Serve this stew with crusty bread or over mashed potatoes if you have the bandwidth. But any bread will work and make cleaning up the bowl easy and tasty.

For Best Results

  • Don’t skip the bacon. It adds smoky richness to the stew and that takes it up a notch flavor wise. You could in a pinch use precooked bacon OR real bacon bits.
  • Whisk the cornstarch fully into the liquid so you don’t get lumps.
  • Don’t stir the stew. If you do you’ll get shredded meat which is fine but it won’t be the stew you’re looking for. The beef with shred and the vegetables will get broken up, taste wise it will be fine but if you don’t like shredded meat it could be a game changer for you.
  • Make this the first time on day when you have a little flexibility. All slow cookers cook differently so the first time in your slow cooker may take longer to finish up, or it could cook quickly. Cook it once when you have time to wait on it, and then you’ll know for the next time you make it.

Store leftovers in the fridge for up to 4 days, they get even better as the flavors meld. Reheat on the stovetop or in the microwave.

Freeze for up to 3 months, thawing overnight before reheating. Warm gently on the stove or in the microwave with a splash of broth to loosen the sauce.

  • 5 medium carrots sliced
  • 1 lb baby yellow potatoes sliced
  • 8 oz fresh mushrooms sliced
  • 12 oz frozen pearl onions

  • 1 tsp sugar

  • 2 tbsps Worcestershire sauce

  • ½ tbsp fresh thyme

  • Add bacon, stew beef, carrots, potatoes, mushrooms, and pearl onions to the slow cooker

  • Whisk together wine, beef broth, tomato paste, sugar, beef bouillon cube, Worcestershire sauce, garlic, and cornstarch in a bowl

  • Pour the liquid over the ingredients in the slow cooker
  • Cover and cook on low for 6–8 hours or high for 4–6 hours until beef and vegetables are tender
  • Do not stir it! You will end up with mushy mess if you stir this stew so just let the slow cooker do the work!
  • Garnish with parsley and serve
