What you need to make slow cooker pepper steak

  • bell peppers (your preference of color)
  • large onion
  • garlic cloves
  • beef, see below for notes on what kind of beef to use
  • soy sauce
  • Worcestershire sauce
  • brown sugar
  • ground ginger
  • ground pepper
  • salt
  • cornstarch
  • low salt beef broth powder or 3 bouillon cubes, crushed
  • ½ cup water

Any Color Bell Peppers for pepper steak

You can use ANY color bell peppers for this recipe. All bell peppers taste the same so use what you have. Or buy what you love or what you can afford. I wouldn’t use frozen bell peppers for this recipe, they’ll be too mushy at the end of the cooking process.

What cut of beef for pepper steak?

Now, onto the star of the show – the cut of beef. While this recipe recommends thin-cut sirloin or center round or round steak, you can explore different cuts of beef like flank steak or chuck steak for equally delectable results.

You can get away with using less expensive cuts of beef in this recipe because of two things. First, the long slow cook will tenderize almost any cut of beef. Second, using soy sauce on beef tenderizes it as well.

Be sure to slice the beef into ¾-1 inch strips, ensuring every piece gets to bask in the marinade’s embrace. This helps with flavor AND tenderizing. Double win.

Make gravy in the slow cooker

Ingredients

  • 3 bell peppers your preference of color
  • 1 large onion
  • 4 cloves garlic
  • 2 lbs beef round steak, sirloin steak
  • 3 Tablespoons soy sauce
  • 1 Tablespoon worcestershire sauce
  • 1 Tablespoon brown sugar
  • 1 teaspoon ground ginger
  • ¼ teaspoon ground pepper
  • ½ teaspoons salt
  • 1 Tablespoon cornstarch
  • 1 Tablespoon low salt beef broth powder or 3 low salt bouillon cubes crushed
  • ½ cup water

Instructions

  • Deseed and slice bell peppers into strips

Notes

Note: The cornstarch thickens the liquid, but only slightly, to make more of a gravy, you can stir 2 tablespoons of cornstarch into a half cup of beef broth or water and stir it into the mixture while it’s still piping hot.

    I’ve been making something similar to this for years. I sear the beef in a skillet with 1 TBSP oil before adding to the crock pot. I then add the peppers during the final 1-2 hours of cooking otherwise they become too mushy. Also try adding a 14.5oz can of stewed tomatoes at the beginning for a different flavor base!
