Cowboy Sliders

Sliders this good don’t last long on the table, grab one while you can, if you can.

Cowboy Sliders are a fun and bold way to change up burger night. They’re packed with flavor and easy to make in the oven for a quick dinner or party snack. The mix of beef, smoky bacon, melted cheese, and crispy onions is hard to resist. They look great on a platter and taste even better.

Each bite gives you ground beef smothered in tangy BBQ sauce, melty cheese, with just a little kick from jalapeño. The fresh made cowboy butter on top adds an extra layer of flavor that soaks into the soft brioche buns.

Cowboy sliders may feel a little extra but they come together with simple ingredients. If you love sliders try my Philly Cheesesteak Sliders, they’re party perfect BUT also work well for dinnertime!

These are great for parties, game days, and potlucks. Everyone loves to see them on the table and they never last too long.

Sliders are a fun dinner the whole family will enjoy. Kids love the size and the cheesy, saucy layers. Grown-ups go back for seconds because the flavors are just that good.

You can switch out the cheese for any variety you like. Pepper jack is fun but if you only have cheddar or monterey jack or any other cheese will work just fine.

You can make cowboy sliders into large sandwiches. Just swap out the 12 slider buns with 4 regular buns and you’re good to go.

Got Leftovers?

Store any leftovers in an airtight container in the fridge for up to two days. Reheat in the oven or air fryer to keep the buns crisp and the cheese melty.

Ingredients

Sliders

  • 1 lb ground beef
  • 1 fresh jalapeño sliced
  • 6 slices pepper jack cheese
  • 1 tbsp Worcestershire sauce
  • 6 slices bacon cooked and crumbled
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 12 count brioche mini buns
  • ¾ cup BBQ sauce
  • 1 medium yellow onion chopped
  • 1 tbsp olive oil
  • ¼ cup crispy fried onions

Cowboy Butter

  • 3 tbsp unsalted butter melted
  • ½ tsp minced garlic
  • tsp fresh parsley chopped
  • ¼ tsp red pepper flakes
  • ½ tsp onion powder
  • Juice from ½ lemon

Instructions

  • Heat oil in a skillet over medium heat
  • Add onion and cook until softened

  • Cook until browned, 7–10 minutes, then drain grease
  • Stir in ½ c BBQ sauce and Worcestershire, simmer for 2 minutes then remove from heat

  • Preheat oven to 350°F (175°C) and spray a baking dish with nonstick spray

  • Slice brioche buns in half and place bottoms in the baking dish

  • Spoon beef mixture onto buns

  • Add top buns

  • Mix melted butter, garlic, parsley, red pepper flakes, onion powder, and lemon juice
