Succulent chunks of turkey breast meat, just enough mayo, crispy celery, fresh green onion, and just enough salt and pepper make this the BEST basic turkey salad you can make at home.
Serve this turkey salad on white bread, pilot bread, leftover dinner rolls, grain-filled bread, lettuce cups, or even on a bed of fresh greens for a leftover turkey meal that won’t leave your kitchen a mess. Simple and perfect!
What kind of turkey should I use for this turkey salad Recipe?
Personally, I prefer all white meat for this salad but it’s ALSO your choice. Love dark meat, use it! Love a blend of white and dark, then by all means make that. You can’t go wrong with this because you’re making it how you like it.
What you need:
- turkey breast meat or dark meat
- mayonnaise or miracle whip
- chopped celery
- green onions
- kosher salt or sea salt
- fresh ground black pepper
- bowl
- knife
- cutting board
- medium or large bowl
- fork or silicone spatula
Variations for this recipe
Have chicken breast instead? You can use this recipe to make a chicken salad as well using leftover rotisserie chicken or home-roasted chicken. Or use thickly sliced deli meats if that’s what you have.
Add a splash of cranberry sauce to the mix OR add it to the finished sandwich. You can use sliced mild red onion instead of green onions. Or add yellow mustard, dijon mustard, or even hearty whole-grain mustard to the mix if you love mustard.

Ingredients
- 2 cups chopped leftover turkey
- 1/2 cup chopped celery, more to tatse
- 1/4 cup chopped green onion, more to taste
- 1/2 cup mayonnaise, more to taste
- salt to taste
- pepper to taste
- 8 slices of bread
Instructions
- mix the turkey, celery, and green onions together in a bowl
- stir in the mayonnaise
- add salt and pepper as desired
- taste and add more mayonnaise, salt, and pepper as desired
- divide the salad between 4 slices of bread and top with the remaining bread
- or serve with crackers or make lettuce wraps with the salad
