- 8 slices bacon cooked and crumbled
- 3 lbs stew beef
- 5 medium carrots sliced
- 1 lb baby yellow potatoes sliced
- 8 oz fresh mushrooms sliced
- 12 oz frozen pearl onions
- 1 cup red wine
- 1 cup beef broth
- 6 oz tomato paste
- 1 tsp sugar
- 1 beef bouillon cube
- 2 tbsps Worcestershire sauce
- 3 garlic cloves minced
- 3 tbsps cornstarch
- ½ tbsp fresh thyme
- Parsley for garnish
Add bacon, stew beef, carrots, potatoes, mushrooms, and pearl onions to the slow cooker
Whisk together wine, beef broth, tomato paste, sugar, beef bouillon cube, Worcestershire sauce, garlic, and cornstarch in a bowl
Pour the liquid over the ingredients in the slow cooker
Cover and cook on low for 6–8 hours or high for 4–6 hours until beef and vegetables are tender
Do not stir it! You will end up with mushy mess if you stir this stew so just let the slow cooker do the work!
Garnish with parsley and serve
