Taco Rice Skillet
Ingredients
- 1- pound lean ground beef
- 1 medium onion diced
- 2 cloves garlic minced
- 1 packet taco seasoning
- 8 ounce tomato sauce
- 10 ounce Rotel not drained
- 1 ½ cups beef broth
- 1 cup long grain white rice uncooked and rinsed
- 2 cups shredded cheese
- Toppings of choice: sour cream diced avocado, guacamole, cilantro, etc.
Instructions
- Crumble the ground beef into a large skillet and cook over medium heat along with the onion until the beef is browned
- Drain off the fat, then add the minced garlic and taco seasoning; cook for 1 minute
- Add the tomato sauce, Rotel beef broth, and rice; stir well
- Cover the skillet with a lid
- Simmer on medium-low heat for 20 minutes or until the rice is fully cooked and tender.
- Top the rice with shredded cheese and replace the lid on the skillet until the cheese is melted
- Serve hot with the toppings of your choice
