- 1- pound lean ground beef
- 1 medium onion diced
- 2 cloves garlic minced
- 1 packet taco seasoning
- 8 ounce tomato sauce
- 10 ounce Rotel not drained
- 1 ½ cups beef broth
- 1 cup long grain white rice uncooked and rinsed
- 2 cups shredded cheese
- Toppings of choice: sour cream diced avocado, guacamole, cilantro, etc.
Crumble the ground beef into a large skillet and cook over medium heat along with the onion until the beef is browned
Drain off the fat, then add the minced garlic and taco seasoning; cook for 1 minute
Add the tomato sauce, Rotel beef broth, and rice; stir well
Cover the skillet with a lid
Simmer on medium-low heat for 20 minutes or until the rice is fully cooked and tender.
Top the rice with shredded cheese and replace the lid on the skillet until the cheese is melted
Serve hot with the toppings of your choice
