Ingredients

  • 1- pound lean ground beef
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 8 ounce tomato sauce
  • 10 ounce Rotel not drained
  • 1 ½ cups beef broth
  • 1 cup long grain white rice uncooked and rinsed
  • 2 cups shredded cheese
  • Toppings of choice: sour cream diced avocado, guacamole, cilantro, etc.

Instructions

  • Crumble the ground beef into a large skillet and cook over medium heat along with the onion until the beef is browned
  • Drain off the fat, then add the minced garlic and taco seasoning; cook for 1 minute
  • Add the tomato sauce, Rotel beef broth, and rice; stir well
  • Cover the skillet with a lid
  • Simmer on medium-low heat for 20 minutes or until the rice is fully cooked and tender.
  • Top the rice with shredded cheese and replace the lid on the skillet until the cheese is melted
  • Serve hot with the toppings of your choice
