What You Need To Make This Alfredo Casserole
This is pretty straightforward recipe, it doesn’t need much in the way of special ingredients.
- dry fettucini noodles
- olive oil
- boneless, skinless raw chicken, breast or thigh,
- salt
- pepper
- fresh broccoli florets, or frozen broccoli
- butter
- minced garlic
- heavy cream
- chicken broth
- cornstarch
- Italian seasoning
- paprika
- onion powder
- shredded parmesan cheese
- fresh parsley

Make it with Chicken Breasts or Thighs
The recipe nutrition information was calculated with boneless skinless chicken breasts. You can swap these out for boneless skinless thighs if you like. Or do a mix of the two.
You can also add more chicken to this recipe if you prefer more protein in this dinner. It won’t hurt the recipe to add up to an extra half pound of chicken. You can save some pasta water and thin down the sauce ever so slightly if it’s too thick with extra chicken.

Swap Out That Pasta!
You can use any pasta you want to for this recipe. Spaghetti noodles work great; they’re just thinner noodles. But shapes work just fine too, try shells or rotini if that’s what you have. Shaped pasta might go over better with kids. My kids never cared as long as it was pasta but your kids might? Chicken Broccoli Alfredo
Ingredients
- 16 oz. dry fettucini noodles
- 2 Tablespoons oil
- 1 lb raw chicken skinless chicken, cubed to ½-¾ inch
- ½ teaspoon salt
- ½ teaspoon pepper
- 2-3 cups broccoli florets or 1 12 oz. package frozen broccoli
Sauce Ingredients:
- 2 Tablespoons butter
- 2-3 cloves garlic minced (about 1 tablespoon)
- 2 cups heavy cream
- 1 ½ cups chicken broth
- 2 Tablespoons cornstarch
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- 1 teaspoon onion powder
- 1 ¼ cups parmesan cheese shredded
- 1 Tablespoon parsley
Instructions
- Cook fettucini according to package instructions reserving ½-1 cup of pasta water for later
- In a large skillet, heat oil over medium-high heat
- Add chicken, salt, and pepper, and stir-fry for 3-4 minutes
- Add broccoli, and continue to cook until chicken is done through – 3-4 more minutes
- Remove chicken and broccoli from skillet
- Add butter and garlic, and cook about 30 seconds
- Add heavy cream, and bring to a simmer
- Stir cornstarch into chicken broth, and add to skillet
- Add Italian seasoning, paprika, and onion powder, and stir until sauce reaches a simmer again
- Turn down heat, and add parmesan, stirring until parmesan is melted
- Add cooked fettuccine, chicken, and broccoli to sauce, and stir to combine. Pasta will absorb some of the sauce, and thicken it. If you’re not serving it right away, you may need to add some of the starchy pasta water to thin it back down.
