Ingredients

  • 1 Tablespoon oil
  • ½ yellow onion diced
  • 8 oz. cremini mushrooms sliced
  • 4 cloves garlic minced
  • ½ teaspoon dried basil
  • ¾ teaspoon paprika
  • ½ teaspoon salt
  • 1 lb gnocchi
  • cup chicken broth can use vegetable broth for vegetarian
  • 1 cup heavy cream
  • 2 cup baby spinach destemmed
  • Crushed red pepper for topping optional

Instructions

  • Heat oil over medium heat in a large skillet
  • Add onions, and mushrooms, and saute until onions are translucent, about 5 minutes

  • Add garlic, basil, paprika, and salt, and saute another minute

  • Stir in gnocchi, then chicken broth and cream

  • Heat to a simmer, cover, and let cook 5-7 minutes
  • Then remove lid, and continue simmering, while you stir in spinach

  • Let simmer until spinach is sufficiently wilted, and sauce thickens slightly – about 5 minutes

    Super yummy and easy to make! I added black pepper in with the other seasonings too. To add a good protein kick I baked some chicken thighs in my air fryer with the same seasonings and added in at the end. Shaved some parm onto each serving. Voila! A full delicious meal!     This is so easy to make and delicious to boot. I have made this twice now and my daughter is still asking when we will have it again. I used half the spinach, didn’t have enough for the full amount in recipe. Great as a main dish, side dish or vegetarian dish. Give it a try, it is YUMMY!
