One Pot Cajun Rice

This one pot Cajun rice dinner is a flavorful and convenient meal that's perfect for busy weeknights. Packed with spicy Cajun seasoning, bell peppers, onions, and sausage, it delivers a hearty and satisfying dish that cooks all in one pot for minimal cleanup.

There is nothing I enjoy more than combining a box mix with a couple of simple ingredients to make a one-pot wonder for dinner. Ok one thing I like more is when it turns out as good as the One Pot Cajun Rice!

Not too spicy, but at the same time not too mild this one pan dinner starts with a Zatarans Jambalaya Rice Blend. This fluffy rice dish will become a new family favorite everyone will love. And they’ll ask for it again and again.

What you need to make One Pot Cajun Rice

Not a whole lot! You only need:

  • Jambalaya rice mix, I used Zatarans, use any 8-ounce mix you like
  • smoked turkey ringe sausage
  • frozen celery and onion mix
  • olive oil
  • water
  • deep frying pan or dutch oven

What kind of sausage should I use?

I like to use ring sausage in these kinds of dinners. I used turkey sausage for this but our family prefers reindeer sausage. I can buy that at Costco so I almost always have them on hand. We prefer reindeer sausage but use turkey sausage, it works great!! Feel free to use any ring sausage your family will like.

But you can also use other cooked proteins such as leftover cooked chicken or cooked shrimp. But if you have other leftover meats in the fridge like prime rib feel free to try those too. I don’t think you can go wrong with this easy one-pan dinner.

Got leftovers?

You’re SO lucky! The leftovers taste great packed in lunches or reheated at home. Be sure to store the leftovers in an airtight container. The leftovers can be kept in the fridge for 3-4 days.

Use this recipe for meal prepping!

Simply cook as directed and then let it cool naturally. Once cooled divide between 6-8 containers. Use four for this week and tuck the rest away in the freezer for another week for pre-made lunches. Or easy dinner prep when you just need a break!

if you’re not planning on meal-prepping lunches with it, cool it completely and pack in freezer-safe containers until you need it.

To use after freezing let it thaw in the fridge overnight and gently reheat in the microwave or a frying pan.

Equipment

  • Large Skillet w lid
  • knife
  • cutting board

Ingredients

  • 1-2 tbsp olive oil
  • 12 ounces frozen peppers & onion stir fry
  • 16 ounces smoked turkey sausage
  • 16 ounces jambalaya mix 2 8-ounce boxes
  • 4 cups water

Instructions

  • Heat skillet on over medium high heat with olive oil
  • Add peppers and onions and cook
  • Allow the water to evaporate from them being frozen 5-6 min
  • While the peppers and onions are cooking, cut the sausage length wise.
  • Then cut the sausage across into slices
  • Add to the skillet to get a nice browning on them, cook 2-3 min
  • Next add the contents of the Jambalaya packets and toss, allowing the rice and seasoning to toast (2-3 min)
  • pour in 4 cups of water, stir and bring to a boil.
  • Cover with a lid and reduce to low for 22-24 mins.
  • Turn off the heat, remove the lid and fluff rice with a fork.
  • Cover for an additional 5 mins to steam the rice fully.
  • Serve and Enjoy

    1. This recipe, in south Louisiana, would be called jambalaya. Jambalaya is a rice based dish.
