Some nights just call for a recipe that tastes like home. And this is that recipe. Growing up we often had ground beef in the freezer, and dinners like this were easy to whip up. And everyone in our house was happy to enjoy a hot dish casserole.

And my kids are no different. If they see this hamburger casserole coming out of the oven, they know dinner is going to be perfection. Who can resist a hotdish casserole? No one in this house, that’s for sure.

Most of the ingredients for this casserole are items you probably have on hand. If you’re buying them, buy enough to make two batches of this hamburger potato casserole and have enough for dinner in a few weeks. Meal planning at it’s best!

Other Ground Meats

You can mix and match ground meats for this casserole. Just remember that turkey or chicken are lighter in flavor than beef. And often juicer, depending on the type of beef you use. So use with caution, they will work, be aware of the juiciness.

Do I Have To Use Mushrooms?

No, you don’t. You can leave the mushrooms out of this casserole if you don’t like them. I don’t think there is anything you can sub in for the mushrooms.

You can use white button mushrooms instead of crimini they work just fine. Baby bellas are the same as crimini mushrooms, so you can use them for this recipe.

You can use canned mushrooms in place of fresh mushrooms. 2 small cans of sliced mushrooms make a nice substitution for the fresh. Just drain and add them to the meat mixture.

How To Store Leftovers

Store leftovers in an airtight container for up to 3 days in the fridge. Reheat as desired for lunches or another dinner.

Meal prep this casserole by making the casserole in small individual pyrex containers. OR make it completely in the 9×13 pan and bake fully. When cool divide between as many lunch box containers as desired. Freeze as needed for lunches in the future. YUM!

Ingredients

  • 1 lb ground beef
  • 1 onion
  • 8 oz. sliced cremini mushrooms
  • 3 cloves garlic minced (about 1 tablespoon)
  • 11 oz. Campbell's Cream of Mushroom Soup 1 can
  • 2 cups whole milk
  • 1 ½ teaspoons salt
  • 1 teaspoon pepper
  • 2 Tablespoon parsley
  • ½ teaspoon paprika
  • 3 lbs red potatoes sliced to about ¼ inch thickness
  • 3 cups shredded cheddar cheese

Instructions

  • Preheat oven to 350º
  • Heat a skillet over medium-high heat
  • Add ground beef and onion, and stir-fry

  • When beef is almost completely browned, add mushrooms, and continue to cook

  • Sprinkle with 1 cup of cheese

    This is an excellent recipe only thing I had a problem with is temperature of the oven I cook at 350 for 55 minutes and the potatoes still were not done. I had to put the temperature at 425 for one hour for the potatoes to even cook I would suggest 3 cups of milk or 2 cups of milk and 1 cup of water so the potatoes can soften.

    1. I think it would be fine. It may taste different and look different but it should be ok! Canned milk or cream work too, thin the cream down with some water. : ) Let me know what you do!
