Chicken Broccoli Alfredo

Chicken Broccoli Alfredo is a creamy, comforting dish that's perfect for an easy weeknight dinner. Tender chicken and fresh broccoli are tossed in a rich Alfredo sauce, making it a family favorite.

Ingredients

  • 16 oz. dry fettucini noodles
  • 2 Tablespoons oil
  • 1 lb raw chicken skinless chicken, cubed to ½-¾ inch
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2-3 cups broccoli florets or 1 12 oz. package frozen broccoli

Sauce Ingredients:

  • 2 Tablespoons butter
  • 2-3 cloves garlic minced (about 1 tablespoon)
  • 2 cups heavy cream
  • 1 ½ cups chicken broth
  • 2 Tablespoons cornstarch
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • 1 teaspoon onion powder
  • 1 ¼ cups parmesan cheese shredded
  • 1 Tablespoon parsley

Instructions

  • Cook fettucini according to package instructions reserving ½-1 cup of pasta water for later
  • In a large skillet, heat oil over medium-high heat
  • Add chicken, salt, and pepper, and stir-fry for 3-4 minutes
  • Add broccoli, and continue to cook until chicken is done through - 3-4 more minutes
  • Remove chicken and broccoli from skillet
  • Add butter and garlic, and cook about 30 seconds
  • Add heavy cream, and bring to a simmer
  • Stir cornstarch into chicken broth, and add to skillet
  • Add Italian seasoning, paprika, and onion powder, and stir until sauce reaches a simmer again
  • Turn down heat, and add parmesan, stirring until parmesan is melted
  • Add cooked fettuccine, chicken, and broccoli to sauce, and stir to combine. Pasta will absorb some of the sauce, and thicken it. If you’re not serving it right away, you may need to add some of the starchy pasta water to thin it back down.
