One Pot Cajun Rice

Equipment

  • Large Skillet w lid
  • knife
  • cutting board

Ingredients

  • 1-2 tbsp olive oil
  • 12 ounces frozen peppers & onion stir fry
  • 16 ounces smoked turkey sausage
  • 16 ounces jambalaya mix 2 8-ounce boxes
  • 4 cups water

Instructions

  • Heat skillet on over medium high heat with olive oil
  • Add peppers and onions and cook
  • Allow the water to evaporate from them being frozen 5-6 min
  • While the peppers and onions are cooking, cut the sausage length wise.
  • Then cut the sausage across into slices
  • Add to the skillet to get a nice browning on them, cook 2-3 min
  • Next add the contents of the Jambalaya packets and toss, allowing the rice and seasoning to toast (2-3 min)
  • pour in 4 cups of water, stir and bring to a boil.
  • Cover with a lid and reduce to low for 22-24 mins.
  • Turn off the heat, remove the lid and fluff rice with a fork.
  • Cover for an additional 5 mins to steam the rice fully.
  • Serve and Enjoy
