Boat Dip
You’ve probably seen Boat Dip making the rounds online, and it’s easy to see why. It’s fast, it uses simple ingredients, and it comes together in one bowl. No cooking, no waiting, just mix and serve. This is one of those easy recipes that works for just about anything. Game day, last-minute guests, or even a snacky dinner when you don’t feel like making a full meal. It’s familiar, filling, and easy to keep on hand.

Boat Dip is creamy with a little kick from the Rotel and filled with shredded cheese to give it some body and make it scoopable. It’s the kind of dip that works with sturdy chips and keeps you coming back for another scoop.
This easy dip works when you don’t have much time or don’t want to cook. Throw it together and serve it as is. Or make in advance and let the flavors build in the refrigerator. You can also double or triple the recipe if you’re feeding a group. Or have a bunch of kids to feed. lol

Ingredients for Boat Dip
Add these to your shopping list if you don’t already have them on hand. Everything is easy to find and doesn’t require any prep beyond opening and mixing.
- sour cream
- RoTel OR generic store brand version
- cheddar cheese
- taco seasoning
- tortilla chips
- green onion
You can swap the cheddar for a different shredded cheese if you like. Use sharp cheddar, colby jack or pepper jack, they will all work fine in this recipe.
Add a little extra heat with hot Rotel or the store brand version if you like it. Or if Rotel is too hot for you swap it out with 10 ounces of mild salsa.

How To Store This Dip
Keep any leftovers in a covered container in the fridge. It holds up well for a couple of days, though you may want to give it a quick stir before serving again. If it thickens up, stir in a small spoonful of sour cream can loosen it back up.
