A No-Bake Strawberry Ice Cream Cake is the ultimate shortcut to a refreshing and impressive dessert. With layers of strawberry ice cream sandwiches, whipped topping, and strawberry sauce for a frozen treat that looks as good as it tastes. It’s the kind of recipe that makes entertaining easy.

When you need a crowd-pleasing dessert without turning on the oven, this ice cream cake delivers. Whether it’s too hot to bake OR your oven is on the fritz or youjust don’t have an oven, you can still make a simple summer dessert the delivers big flavors. I first discovered a cake like this many years ago when we were remodeling and didn’t have an oven to bake a cake for our youngest son. And they’ve become a family favorite during the hot summer months.

They’re simple to assemble, require zero baking, and they come together in minutes and stay frozen until you’re ready to serve, so easy! Just stack, spread, repeat, and top and freeze. No complicated steps, no special skills needed. Perfect for summer gatherings, birthdays, or whenever you’re craving something cold and sweet.
Ingredients For Stawberry Ice Cream Cake
Since this cake is built with ice cream sandwiches, there’s no need to fuss with a lot of ingredients. Stack the easy layers in one pan, and the freezer does all heavy lifting for this dessert.
- strawberry ice cream sandwiches OR strawberry cheesecake ice cream sandwiches
- Cool Whip
- strawberry ice cream topping
- fresh strawberries for garnish and topping

Switch It Up
Switching up the flavors is easy. Use chocolate ice cream sandwiches with a strawberry drizzle for a richer twist, or swap in strawberry-filled sandwiches with chocolate sauce. The ice cream sandwiches and ice cream toppings are interchangeable, and work well in any combination.
Change up the toppings/garnish add thinsg like white chocolate chips, crushed graham crackers, Golden Oreos, or even extra strawberry sauce. Mix it up and you can take this summer dessert to the next level. You could even top this cake with chocolate-dipped strawberries for an extra indulgent finish.

How To Store This Cake
Storing leftovers is easy—just keep the cake well covered in the freezer for up to two months. Try to keep it covered tightly so it doesn’tdry out and get freezer burnt.
You can absolutely make this cake ahead of time too! Again just wrap it tightly so it doesn’t dry out. And don’t top it with sliced strawberries until you’re ready to serve.
