Instant Pot Stuffed Pork Chops

This recipe for Instant Pot Stuffed Pork Chops is one of the best meals I’ve ever made in my Instant Pot. Considering how much I use my IP that is truly saying something.
Tender pork chops and cornbread stuffing come together in the IP for a delicious quick meal that you’ll want to make again and again!
Stuffed Pork Chops
For these Instant Pot Stuffed Pork Chops start with boneless loin chops cut extra thick. I bought a whole pork loin and cut them myself while I was cutting it up. But I’m sure you can get your butcher to cut some thick chops at the counter. These were roughly 1 1/2 inches thick.
About the Mushrooms Called for in This Recipe
I used the mushrooms in PLACE of the trivet. If you don’t like mushrooms or don’t have them by all means use the trivet. What you don’t want is to have those chops down in the cooking water. You want them just above it.
You can EASILY replace the stuffing, onions, and celery in this recipe with TWO boxes of Stove Top Stuffing to make stuffed pork chops. It’s quick and easy and tastes GREAT! No worries, you have to do what works for you.
Can you pressure-cook pork chops? YES!!
Pressure Cooking pork chops in the IP makes them tender enough to cut with a fork. After browning these take just 10 minutes on manual and 10 minutes on natural release and your dinner is ready!
What do I need to make IP Stuffed Pork Chops?
- An Instant Pot, I use the good old Duo 7/1 Instant Pot
- 4 thick cut boneless loin chops, roughly 1 1/4-1 1/2 pounds total weight
- stuffing mix one box of stuffing mix OR two boxes of Stove Top Stuffing
- chicken broth or water
- celery
- onions
- mushrooms OR the IP trivet
- spices

Instant Pot Stuffed Pork Chops

Ingredients
- 1 Tablespoon oil
- 4 pork chops get thick chops, with a pocket cut in for stuffing, or that you can cut a pocket for stuffing
- 2 teaspoon salt divided
- 2 teaspoons garlic granules divided
- 2 teaspoons black pepper divided
- 1 Tablespoon Italian herb blend divided
- 1/2 teaspoon smoked paprika
- 6 Tablespoons of butter divided
- 1/2 cup celery
- 1/2 cup onion
- 2 cups chicken broth divided
- 12 ounces cornbread stuffing mix
- 10 mushrooms
Instructions
- turn the instant pot to saute, add oil and let it come to temperature
- pat pork chops dry and set aside
- mix together half the salt, garlic, and pepper, 1 teaspoon of the Italian herbs, and the smoked paprika
- rub each side of the chops with this mixture, save the extra for later to put on top of the mushrooms
- once the pot is hot brown two chops at a time, repeat with remaining chops, once the chops are browned turn its time to make the stuffing
- melt 4 Tablespoons of the butter
- chop the celery and onion and saute for 5 minutes
- add 1 1/2 cups broth or water and the rest of the salt, garlic, pepper, and Italian herbs and stir to scrape up any browned bits
- bring to a boil and stir in the cornbread stuffing mix turn off the heat and remove the stuffing to a bowl
- stuff the pork chops with 1/2 cup of stuffing mix
- make sure the bottom of the instant pot gets wiped clean
- slice the mushrooms and put them in the pot OR place the trivet in the pot
- pour 1/2 cup of chicken broth or water in, and sprinkle with the leftover spice mix from seasoning the chops
- place the chops on top of the mushrooms or the trivet stuffing side up
- place the remaining stuffing around the chops
- dot with the remaining butter
- put the lid on, turn the knob to pressure cook, press manual, set the timer for 10 minutes
- once the timer goes off let the pot natural release for 10 minutes
