This is the kind of soup you see in cafes and coffee shops. Except THIS one isn’t made in a massive factory. Sent in a plastic bag and reheated as “homemade soup.” This chicken and wild rice soup is the real deal!
What do I need to make this Chicken Wild Rice Soup?
This Slow Cooker Chicken and Wild Rice Soup can mostly be made with pantry and freezer pantry staples.
- boneless skinless chicken breasts
- chicken broth, chicken stock, or use chicken bouillon cubes
- celery
- carrots
- garlic
- onions
- wild rice blend
- Italian seasoning blend, poultry seasoning, or Greek seasoning
- milk
- water
- cornstarch
- slow cooker
- cutting board or bowl to shred chicken
What kind of wild rice am I using?
For this recipe you can use ANY wild rice blend you like or have. I used this Rice Blend from Amazon. I can also find a similar mix at my local Albertson grocery store. Kroger carries one as well. Any of them will work.
I don’t think you want to use all wild rice; you just need some in the mix for flavor and taste. And looks!

BUT any bread you buy or have on hand will be fine. You don’t need fresh bread just something to mop up your bread with.

How to store leftovers
Store leftovers in an airtight container. I recommend, use, and love these Pyrex Dishes for easy storage in the fridge. But use what you have.
Reheat soup over medium heat or in the microwave and serve leftovers for lunch or dinner. Or heat them up in the morning and send it in a thermos for lunches either at work or at school.
Slow Cooker Chicken and Wild Rice soup
Ingredients
- 2 chicken breasts
- ½ lb baby carrots chopped
- 3 celery stalks chopped
- ½ cup yellow onion chopped
- 4 garlic cloves minced, or use garlic powder
- 1 cup wild rice mix see post for the kind of wild rice mix I used
- 1 tablespoon Italian seasoning dry herbs, or you can use poultry or Greek seasoning if desired
- ¼ teaspoon black pepper
- pinch salt
- 4 cups Chicken Broth
- 1 cup Milk
- 1/4 cup cold water
- 1 TBSP Cornstarch
Instructions
- add the chicken, carrots, celery, onion, garlic, rice, seasonings, and chicken broth to the crock of your slow cooker, stir to combine
- cook on low without stirring for 6-8 hours
- once the chicken is cooked, remove it from the pot and shred
- while the chicken is out of the pot add the milk
- mix the water and cornstarch together
- add a ladle of hot soup to the cold cornstarch and stir it together to temper it(keep it from seizing up)
- then pour it into the hot soup and stir to combine
- return the chicken to the pot and allow the soup to thicken (about 30 mins)
- when thickened up serve hot
Notes
- To thicken the soup even more you can use Half and Half or Heavy Whipping Cream instead of milk.
- Store in the refrigerator in an airtight container.
