Slow Cooker Garlic Parmesan Chicken

This hearty slow cooker dinner will make everyone come running for the table. It comfort food that doesn't take a lot of work.

Just what I need, and you need, I hope! Another easy-to-make dinner. This time it’s Slow Cooker Garlic Parmesan Chicken. Savory and delicious, this chicken cooks up perfectly every time in the crock pot giving you a dinner you hardly have to think about.

Add everything to the slow cooker early in the morning, cover, turn it on, and come home to dinner that is almost ready to serve. This recipe requires a little bit of work before serving, but the work is worth it.

You can serve this Slow Cooker Garlic Parmesan Chicken over just about anything. Serve it over crispy bread and let that sauce soften it up. Use more bread to sop up the luscious creamy sauce.

Try it over mashed potatoes or cooked rice or pasta. When I use it this way, I serve this chicken in bowls for an easy bowl dinner that everyone can top however they like. We put extra parmesan fresh or grated work fine here. Some people in our house even love to top it with cheddar.

Other toppings that are popular right now are real bacon bits, like the kind you get at Costco. These take it right over the top. And one more, crispy onions! Of course, we will use any excuse to use crispy onions

  • melted butter
  • boneless skinless chicken breasts
  • medium onion
  • garlic
  • chicken broth or chicken stock or bullion will work here
  • salt
  • pepper
  • heavy cream
  • cornstarch
  • parmesan cheese
  • parsley (optional)
  • slow cooker
  • cutting board and knives
  • whisk
  • cheese grater if not using grated or shredded parmesan

Store any leftovers separately from what you’re serving the chicken over. That will keep the rice or pasta from soaking up the sauce. Leftovers will keep for up to 3 days in the fridge. They never last that long around here though!

Equipment

Ingredients

  • 2 Tablespoons butter melted
  • 4 boneless skinless chicken breasts
  • 1 onion diced
  • 8 cloves garlic minced
  • ½ cup chicken broth
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 cup cream
  • 1 Tablespoon cornstarch
  • ¼ cup parsley chopped
  • cup parmesan cheese

Instructions

  • Drizzle butter in bottom of crockpot
  • Add chicken, onion, garlic, chicken broth, salt, and pepper
  • Place lid on crockpot, and cook on high for 4 hours or low for 8 hours
  • Remove chicken from pot, it will break apart but that's ok
  • whisk cream and cornstarch together, then add some of the broth from the cooker and then stir into crockpot
  • Stir in parsley
  • Place chicken back in pot, and sprinkle with parmesan
  • Place lid back on pot, and let cook an additional 20-30 minutes until sauce is thickened, and cheese is melted
  • while the sauce thickens up prepare what you're going to serve it with pasta, rice, or toasted bread
  • when the chicken is done serve it over your
