What kind of apples do I need to use?

The best kind of apples for this cake recipe are crisp and tart apples. I used Granny Smith apples. But read my best apples for baking post to see if perhaps there are other apples you can use.

Granny Smith will hold their form better than soft apples. They won’t melt down in the cake and get mushy. Apples that are softer to start with have a tendency to get mushy when baked.

And let’s be honest if you HAVE apples and want to make this cake, then make it. The apples will do what they’re going to do, and you’ll STILL have a cake. Sure, they might get too soft, but you’ll have cake, AND you’ll have used up those apples lingering in the fridge. So I say go for it. And let me know how it goes.

To peel or not to peel apples

I think it depends on the recipe and the apples whether or not you peel apples. I know for my apple crumble we left the peels on and it worked just fine. For this cake, we peeled them. Sometimes apple peels, when cooked, can get a little tough and crispy. So it’s totally up to you, I think you can do either.

Got Leftovers?

This cake is best made and served on the same day. Any leftovers can be covered tightly and stored in the refrigerator for up to 4 days.
