You know I don’t like labels like picky eaters but you also know they DO exist!! This tortellini soup recipe will suit them just fine. The kale may be a bit problematic but I usually just chop it finely and add it. If you’re struggling with it add less of it and build it up over time.

What do You need to make this sausage tortellini soup?

  • Italian sausage (remove casings if needed) can use Hot Italian Sausage if desired
  • diced onion
  • minced garlic
  • basil
  • Italian seasoning
  • ground mustard
  • All-purpose flour
  • chicken broth or chicken stock or homemade bone broth
  • tortellini (refrigerated or frozen)
  • salt
  • half and half
  • chopped kale
  • *optional parmesan cheese to sprinkle over the top
  • 5 quart dutch oven
  • wooden spoon

Yes, you read that right, there are no crushed tomatoes or tomato puree or tomato sauce in this soup. It’s tomato-free soup! it’s a nice change up to this traditional creamy tomato tortellini soup.

You can use any type of pork sausage you like, but Sweet Italian sausage works well here. If you prefer a hot Italian sausage or mild Italian sausage use it! And you can use links OR bulk sausages.

If you don’t have pork sausage or don’t eat pork you can swap it out with homemade sausage or chicken sausage. It will change the final product but hot finished soup is the best kind of soup.

What kind of tortellini

This soup was made with fresh cheese tortellini. But you can use either fresh or frozen. Fresh tortellini from the refrigerator section is so easy to use. And if you can find frozen? Grab some it is so easy to keep and use when dinner time gets desperate.

I like to use frozen because it doesn’t take up any room in my fridge. This soup was made with cheese-filled tortellini but feel free to use tortellini filled with any filling you like. Use chicken, sausage, or spinach tortellini will all work just fine.

If you want to use dry tortellini, found in the dry pasta section of your grocery store. It takes longer to cook than fresh or frozen tortellini. If I were going to use dried I would cook them separately and then add them to the soup at the half-and-half stage.

Change it up!

This Sausage Tortellini Soup is a comforting, hearty meal that’s perfect for dinner or lunch on a chilly day. The broth is warm and savory, and the sausage and tortellini add both flavor and substance. But this soup is also incredibly versatile. You can add vegetables like carrots, celery, and extra onions to make them even more filling. Just add the raw chopped veggies and saute them with sausage and onions.

We also like to add a pinch of red pepper flakes to the soup too. Add it while to soup is simmering so it has a chance to add heat to the soup.

You can also swap out the kale with fresh spinach or fresh baby spinach. Just add it right before you’re about to serve the soup. Sometimes kids like spinach better than kale because it gets softer and melts down in the soup. There’s basically nothing left to chew when it’s in the soup.

Ingredients

  • 1 TBSP olive oil only use if using a lower fat sausage like chicken
  • 1 lb Italian sausage remove casings if needed can use Hot Italian Sausage if desired
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 1 teaspoon dry basil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon ground mustard
  • 3 Tablespoons flour
  • 4 cups chicken broth or use chicken stock
  • 12 oz. tortellini refrigerated or frozen
  • ½ teaspoon salt
  • 1 cup half and half
  • 2 cups kale chopped and destemmed (about 1 bunch)
  • 1/2 cup parmesan optional for topping the soup

Instructions

  • if using it put the oil in the dutch oven, heat over medium heat until it shimmers and add the sausage and onion
  • If not using any oil then just saute sausage and onion as is

  • cook together together until sausage is browned and cooked through
  • Drain sausage if needed, leaving 1 tablespoon of grease
  • Add garlic, basil, Italian seasoning, ground mustard, and flour

  • Cook, stirring for about 30-60 seconds

  • Stir in chicken broth, tortellini, and salt

  • Bring to a simmer, and simmer for about 3 minutes
  • Stir in half and half and kale and continue to simmer an additional 3-5 minutes until kale is wilted and tortellini is done through
