I had a box of apples that were less than appealing, too ugly to eat raw, too ugly to slice for kids without gasps of horror, I couldn’t throw them out. Well I could have but they were technically still good, just ugly and wrinkled, the thrifter in me knew I could find a use. I just needed to think. THINK. And that’s where I left off before Christmas, only to discover I STILL had to deal with them in the New Year. Crazy.

My youngest son, Mr. Surprise actually solved the problem for me. We were shopping the other day and he wanted the pink apple sauce in little tiny cups for $3.49 a four pack, it was not happening. But it did click for me that I had apples AND strawberries (in the freezer) so I could make him pink apple sauce that doesn’t cost $3.49 a four pack. Apple problem solved, kid problem solved, lunches for the week solved. 

Strawberry Apple Sauce
8-10 apples
2 cups water-maybe more or less
2 cups strawberries, add them fresh or frozen

wash apples well, cut apples into bite sized pieces-I don’t peel my apples, it’s your choice whether you peel them or not
add the apples to the a 4 quart dutch oven, add the apples
bring to a boil, then lower heat and simmer for 1-2 hours until the apples are pretty well cooked down
add the strawberries and cook until they are soft
mash well with a potato masher, put through a food mill or food processor if a smoother texture desired
we like our apple sauce chunky so I just cooked it and mashed
if you want to can it for later use, pour into sterilized jars, wipe the rims, add hot lids and rings, process in a hot water bath for 5 minutes, remove and let sit until cooled, test the lids if any are not sealed place them in the fridge for use first

This was such a great way to use up those ugly old apples and please a little boy at the same time. An added bonus was that we has fresh new apple sauce for school lunches for Union. Real fresh food for kids.

And yes the wind is still blowing and it may not stop until Saturday. And it’s a four day weekend, ha-hai. It’s a good good thing we are so deeply involved in decrapifying, we can’t play outside, we don’t have snow and we could go crazy if we weren’t so into looking for things we no longer use. Puzzles, who knew we would love them so much after a year of being in hiding?

  1. I make normal applesauce from scratch and leave the skins on also. J is in love w/ the little cups of the peach and strawberry flavored applesauce for his lunches. I wait until they're buy 1 get 1 free, but this works too! Great idea!
