Garlic Hasselback Potatoes

These simple buttery garlic potatoes turn everyday dinners into something worth looking forward to.

This is one of the best ways to level up your potato game without a lot of extra work. Hasselback potatoes look impressive, taste incredible, and turn an ordinary spud into something special. The fanned slices soak up butter, garlic, and parmesan so every bite has great flavor. They fit right in with weeknight dinners and also look right at home on a holiday table.

These potatoes bake up crisp on the edges with soft, tender centers. The garlic butter sinks between the slices so each piece carries a mix of savory garlic, melted butter, and light parmesan. The flavor is familiar but upgraded, with enough richness to pair well with homestyle dinners. They feel like a cross between a baked potato and a roasted side, with better texture than either.

Make these for the potato lover in your life and for the times you want something a little more interesting than a standard baked potato. They work well for dinner parties because they look fancy but don’t require complicated steps.

What You Need To Make These Potatoes

Before you shop, note the handful of flavorful ingredients that give this dish its savory edge. Because the seasonings are simple, choosing fresh garlic, good butter, and firm potatoes makes a noticeable difference.

  • russet potatoes
  • olive oil
  • salt
  • pepper
  • butter
  • shredded parmesan
  • chopped parsley
  • minced garlic

These potatoes go perfectly with Bacon Cheeseburger Meatloaf or Mississippi Pot Roast. They also work with any classic homestyle dinner that calls for a hearty potato side.

How To Store Leftovers

Leftover Hasselback Potatoes can be stored in an airtight container in the refrigerator for up to three days. Reheat in the oven or air fryer to bring back the crisp edges. They won’t be as firm as the first day, but they still make a great side or even a quick lunch.

Or heat up a little butter or oil in a skillet over medium heat. Chop up the leftver potatoes and add them to the pan too. Then brown and crisp up the potatoes. Kind of like hashbrowns or country fries. Add an egg and you’ve got a whole new meal from leftovers!

Notes

Chopsticks help prevent slicing through the potatoes but wooden spoons can work too
