Strawberry Puree

When you’re looking for an alternative to a pink food color for a cake or cupcakes, check out Strawberry Puree. It’s made from pure strawberries and it makes a lovely pink cake color. It’s perfect for any dessert that needs a little hint color and obviously a mild strawberry flavor. I made it specifically for a recipe that I’m publishing soon.

Be sure to come back and see what recipe I’m talking about, you’ll want to whip one up whenever fresh strawberries are in season. Oh heck, you can even use frozen strawberries in this recipe. You can absolutely use the puree for a yogurt topping or in margaritas or just eat it with a spoon when no one is looking. That last one is my favorite form of enjoying treats!

Strawberry Puree

So ridiculously easy.

Strawberry Puree is made from pure strawberries and that’s it. I hesitated to even write it up but I realized that adding two recipes to a blog post is in bad form so here’s this little piece first and then check how I used it later. Everything in blogger land says don’t post two recipes in one post and now that I’ve started following those simple rules, here I am.

Use fresh OR frozen strawberries in this recipe, you can’t go wrong with either one. In fact, I’d use frozen berries here just because fresh berries in Alaska are expensive. And seasonal. Seasonal for everyone else that is. We get them from about April to maybe mid-summer for a decent price. After that we’re out of luck, they’re all imported or priced so high we can’t afford them. Or better yet (not really BOTH). So in writing this post I’ve come to the conclusion that frozen berries are where it’s at. Save your fresh berries for snacking or lunches!

  • 1 pound strawberries fresh or frozen

Instructions
  1. wash and hull strawberries if needed
  2. put them in the bowl of a food processor and puree them
  3. scrape into a small sauce pan
  4. cook over low to medium heat for 30 mintues, stirring occasionally
  5. cook and stir until reduced by half
  6. you should have just over 1/2 cup of puree once it is completley reduced
  7. cool throroughly before using in cake recipes
Recipe Notes
  • you may need to reduce the amount of liquid in your recipe if using more than a 1/4 cup of puree, be sure to experiment before attempting to bake a cake to impress anyone
