Here’s what you’ll need:

  • cooked chicken breast (see below for notes on chicken to use)
  • olive oil
  • onion
  • garlic cloves
  • chicken broth or chicken stock or even chicken bullion cubes
  • half and half (can sub in whole milk and a little heavy cream)
  • fresh spinach
  • butter
  • ready to use gnocchi
  • Parmesan cheese
  • Salt and pepper, to taste

What kind of chicken should I use?

This recipe calls for cooked chicken, chopped or shredded. You can cook skinless chicken breasts and use that, however, I like to use leftover chicken for recipes like this. Use any chicken you have on hand. Or use leftover rotisserie chicken. Even leftover turkey would work in this recipe!

Can I add vegetables??

Absolutely!! Add peas or carrots, or even chopped broccoli work really well in this recipe! Or add more spinach than what is called for, this soup can handle it. if you have any leftover cooked vegetables they can be added to the soup as well.

If you’re using frozen or fresh veggies that need a little cook time beyond the cook time of the soup you can cook them or microwave them before adding them to the soup.

Where to buy Potato Gnocchi?

Packages of ready-to-use gnocchi can be found right in the pasta aisle of the grocery store. They’re not dried they’re much like the fresh pasta you see in the refrigerator aisle. But again they’re often found in the dry pasta aisle, not the refrigerators, but check both just in case.

Ingredients

  • 2 Tablespoons olive oil
  • 1 Tablespoon butter
  • 1 yellow onion diced
  • cup celery diced
  • 3 cloves garlic minced
  • ½ teaspoon thyme
  • ½ teaspoon parsley
  • ½ cup flour
  • 4 cups chicken broth
  • 1 cup spinach chopped
  • 1 cup chicken cooked and cubed or shredded
  • 1 lb gnocchi
  • 4 cups half and half
  • Salt and pepper
  • fresh herbs of thyme OPTIONAL for garnish

Instructions

  • Heat oil ad butter together in a large dutch oven over medium heat
  • Saute onion and celery until translucent
    Saute celery and onion until translucent.
  • Add garlic and saute another minute
  • Stir in flour, thyme, and parsley
    Stir in herbs and flour.
  • Add chicken broth, and stir to dissolve flour
    Stir in the chicken broth.
  • Add spinach, chicken, and gnocchi, and simmer until the soup has thickened
    To the pot add chicken, gnocchi, and spinach.
  • Stir in half and half, season with salt and pepper to taste, and heat through
  • Serve hot with bread and salad
