Heat oil ad butter together in a large dutch oven over medium heat
Saute onion and celery until translucent
Add garlic and saute another minute
Stir in flour, thyme, and parsley
Add chicken broth, and stir to dissolve flour
Add spinach, chicken, and gnocchi, and simmer until the soup has thickened
Stir in half and half, season with salt and pepper to taste, and heat through
Serve hot with bread and salad
