This Buffalo Chicken Spice Rub recipe came about because my husband is always reaching for sriracha or buffalo sauce to sprinkle on his food. Even though the carb load in those is negligible, I thought a change up of the standard low carb grilled chicken would be delightful. It certainly was! I wanted to knock his socks off with a “just for him” dinner, and this recipe delivered. For the kids I made a mild barbecue chicken because this is not child approved, my hands were even tingling after dipping and rolling the chicken in it.

Flaming Hot Buffalo Chicken Spice Rub
Ingredients
- 1 teaspoon onion powder
- 1 teaspoon chipotle powder
- 1 teaspoon smoked paprika
- 1 teaspoon tomato powder
- 1 teaspoon salt
- 1/2 teaspoon garlic granules
- 1/2 teaspoon cayenne pepper
Instructions
- sift together all ingredients
- to use: preheat oven to 350˚
- dip 2 pounds bone-in chicken pieces in 2 Tablespoons melted butter
- rolled in spice mix
- lay on a baking sheet or on a cooling rack set over a baking sheet
- drizzle any remaining butter over the chicken
- bake at 350˚ for 45 minutes or until cooked through
I think this sounds delicious but my hubby is very spice sensitive so I get all my heat when we go out for dinner.

Well if he LOVES spicy stuff you might want to double the cayenne and the chipotle! Wooohbaby!
