Slow Cooker Mississippi Chicken

- 3 lb chicken breasts
- 1 medium onion, diced
- 1 packet ranch dressing mix
- 1 packet au jus gravy mix
- 8 whole pepperoncini peppers (reserve the juice from the jar)
- ¾ cup pepperoncini juice
- ½ cup (1 stick) butter, sliced
Spray the inside of a large slow cooker with non-stick cooking spray
Spread the diced onion evenly across the bottom of the slow cooker
Place the chicken breasts on top of the onion
Sprinkle the ranch dressing mix and au jus gravy mix evenly over the chicken
Place the whole pepperoncini peppers on top of the chicken, then pour in ¾ cup of the reserved pepperoncini juice
Distribute the slices of butter over the chicken
Cover the slow cooker and cook on low for 6–7 hours or on high for 4–5 hours, until the chicken is tender and easily shredded
Use two forks to shred the chicken directly in the slow cooker, mixing it with the flavorful juices
Serve hot over mashed potatoes, rice, or noodles
