Slow Cooker Corned Beef
The slow cooker makes it tender and the broiler adds a caramelized finish that takes this classic corned beef to the next level.

- 1 corned beef brisket 3 to 4 pounds with spice packet
- 1/2 cup water
- 2 tbsp Dijon mustard
- 3 tbsp brown sugar
Pour the water into the slow cooker
Add the spice blend from the packet to the water
Place the corned beef brisket fat side up into the slow cooker
Cover and cook on low for 8 hours or high for 4 hours until the brisket is very tender and jiggly
Preheat the broiler
Line a baking sheet with foil
Transfer the cooked brisket to the prepared baking sheet fat side up
Brush the top with Dijon mustard
Sprinkle evenly with brown sugar
Place on the lowest rack under the broiler
Broil for about 10 minutes until the sugar caramelizes
Watch carefully so it does not burn
Remove from the oven and let rest 5 to 10 minutes before slicing
- For best results cook on low for 8 hours until the brisket is very tender
- If cooking on high plan for about 4 hours plus broiling time
- Slow cooking on low gives the most tender texture
- Slice against the grain before serving
