Instant Pot Brownie Bites

Ingredients

  • 1 cup melted butter
  • 2 cups sugar
  • 1/2 cup unsweetened cocoa powder
  • 4 eggs
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Instructions

  • lightly spray your egg bite molds with a non-stick spray OR wipe with a little vegetable oil
  • whisk the melted butter and sugar together

  • add the cocoa powder and whisk until well combined

  • stir in the vanilla
  • stir in each egg, don't beat them just stir to combine
  • mix the dry ingredients together and stir into the wet mix

  • stir until well combined, do not beat
  • divide mix between egg molds filling each roughly 3/4 of the way full, cover
  • add one cup of water to the pot put the trivet in the bottom of the pot
  • stack together Instant Pot ON the trivet over the water
  • put the lid on, press manual high, and adjust the time to 20 minutes
  • make sure the vent is set to cooking not venting
  • when the pot beeps let it natural release for ten minutes and then gently vent the remaining steam
  • open the molds, pop out the brownies and let cool
  • or serve warm with a scoop of ice cream
