Chicken Fajita Casserole

This super simple chicken fajita casserole is going to be a family favorite weeknight dinner that everyone will love!

Ingredients

  • 1 1/2 lbs chicken breast cubed
  • 2 bell peppers deseeded and cut into strips, use red or green peppers
  • 1 onion sliced
  • 2 Tablespoons fajita seasoning
  • 1 Tablespoon vegetable oil
  • 1 cup sour cream
  • ½ cup salsa
  • 1 ½ cups shredded cheddar cheese
  • *optional toppings chopped cilantro, chopped jalapeños, sour cream, shredded cheese, salsa or pico de gallo for serving

Instructions

  • Preheat oven to 375º
  • Combine chicken, peppers, onion, fajita seasoning, and vegetable oil in a bowl and toss to coat everything in the oil and seasoning
    Mix oil, seasoning, vegetables mixed together.
  • Pour into a 9x13-inch baking dish, or 10-inch cast iron skillet, and bake in preheated oven for 20 minutes
    Cast iron skillet with fajitas in to bake in the oven.
  • While the chicken is baking, combine sour cream and salsa
    Combine salsa and sour cream.
  • Remove chicken from oven and pour sour cream mixture over chicken
    Pour sour cream mixture over the chicken fajita mix.
  • Stir to combine
    Stir the sour cream mix into the fajita skillet.
  • Top with cheese
    Cheese sprinkled on top of the fajita casserole.
  • Place back in the oven for 10 more minutes, until cheese is melted and beginning to look toasty
    Gooey melted cheese on top of chicken, peppers, onions in a casserole.
  • Remove from oven and serve with sliced avocado, and your choice of optional toppings cilantro, chopped jalapeños, extra salsa, extra sour cream, or extra shredded cheese
