- 4 oz cream cheese softened
- 1/2 cup icing sugar
- 1 tsp vanilla extract
- 1 1/4 cup Cool Whip
- 1 1/2 cup Cadbury Mini Eggs chopped and divided
- Food coloring optional
Beat the cream cheese icing sugar and vanilla together with a hand mixer until smooth
Add food coloring if using and mix until evenly colored
Fold in the Cool Whip with a rubber spatula
Stir in the chopped Mini Eggs reserving 2 tbsp for topping
Sprinkle the remaining Mini Eggs on top
Serve immediately or chill before serving
