• Whisk gelatin and boiling water in a mixing bowl until fully dissolved
• Refrigerate for about 1 hour, checking occasionally until it becomes thick and clumpy
• Once it starts to clump, remove from the fridge and gently break it up with a whisk or spoon
• Add Cool Whip and stir until the mixture looks clumpy and “bloody”
• Set aside
• Spray the brain mold with baking spray or oil and use a paper towel to coat all crevices
• Place the mold on a small baking sheet
• Pour in about one-third of the gelatin mixture and tap the pan on the counter to fill all creases
• Repeat twice more, filling the mold completely and removing air pockets
• Refrigerate for at least 6 hours, preferably 24, until fully set

To Serve

• Loosen the edges of the mold
• Fill a large bowl with hot water and set the mold in for 30 seconds to loosen
• Remove, dry the mold, and invert a serving platter on top
• Flip the mold and platter together and gently ease the gelatin out
• Garnish the platter with red lettuce leaves or kale for effect
