Unfold the puff pastry, roll each sheet to roughly 10x10 inch squares, lay on a baking sheet, you can put it on parchment paper for easier clean up
Combine the brown sugar, flour, spices and chopped apple
Spread 1 TBSP of the softened butter over each dough square
Lay half the apple mixture down the middle of the dough, if you look carefully you'll see the fold lines on the dough, use those as your guidelines and fill the middle rectangle
use a knife to cut flaps of dough down each side of the apple mixture, roughly 2 1/2 inches long and around 1 inch apart (cutting and folding guide below)
Repeat on the other side
Then beginning at the top over lap each side forming a woven top, fold and tuck each end under securely
Repeat with the second piece of dough
Mix the topping mixture together to form crumbs
Brush the top of each loaf with milk and then sprinkle on half of the streusel
Chill in the fridge for at least 15 minutes, you can cover them and chill overnight if you like
And then bake for 25-30 minutes in a 350˚ oven
