These creamy, fruity strawberry cheesecake bars are the perfect no-bake dessert for any occasion. With a buttery graham cracker crust and luscious strawberry filling, they are sure to be a crowd favorite!

Ingredients

For the crust:

  • 1 1/2 cups graham crackers (about 8 rectangles)
  • 1/4 cup sugar
  • 6 tbsp butter, melted

For the cheesecake:

  • 16 oz cream cheese
  • 1 1/4 cups strawberries, chopped
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 cup Cool Whip
  • Whipped cream and fresh strawberries for topping

Instructions

  • Line a square baking dish with parchment paper and set aside
  • Blend graham crackers in a food processor or blender until finely ground

  • Add sugar and melted butter to the crumbs and blend until well combined

  • Press the graham cracker mixture firmly into the bottom of the baking dish

  • Place the dish in the freezer for 45 minutes
  • Blend chopped strawberries and sugar in a food processor until smooth

  • Chop the cream cheese into smaller pieces and add it to the processor along with vanilla

  • Blend until smooth and fully combined

  • Fold in Cool Whip until incorporated

  • Pour the strawberry mixture over the graham cracker crust and smooth the top
