Slow Cooker Split Pea Soup with Sausage

- 3 cups dried split peas--green or yellow
- 2 quarts water
- 8 ounces bulk breakfast sausage
- 2 slices bacon-chopped
- 3 large carrots
- 2 stalks of celery
- 2 teaspoons dried Italian herbs
- 1 teaspoon garlic granules
- dash cinnamon
- dash dash of nutmeg
- pinch of pepper
- salt to taste
wash and pick over your peas
pour them in the slow cooker and pour the water on the top
cover and cook on high 4 hours or low for around 6--all slow cookers are different
when peas are cooked through, about 4 hours later brown the bulk sausage and bacon in a frying pan
clean and chop the carrots and celery and add them to the pan
cook and stir until the sausage is cooked through
deglaze the pan with ½ cup of water or so and scrape up all the great browned bits
pour all the sausage mix in the slow cooker and stir to combine
add the rest of the ingredients except the salt and cook for another hour or so
taste for salt after about ½ hour or so and salt as needed to taste
