Ingredients

  • 3 cups dried split peas--green or yellow
  • 2 quarts water
  • 8 ounces bulk breakfast sausage
  • 2 slices bacon-chopped
  • 3 large carrots
  • 2 stalks of celery
  • 2 teaspoons dried Italian herbs
  • 1 teaspoon garlic granules
  • dash cinnamon
  • dash dash of nutmeg
  • pinch of pepper
  • salt to taste

Instructions

  • wash and pick over your peas
  • pour them in the slow cooker and pour the water on the top
  • cover and cook on high 4 hours or low for around 6--all slow cookers are different
  • when peas are cooked through, about 4 hours later brown the bulk sausage and bacon in a frying pan
  • clean and chop the carrots and celery and add them to the pan
  • cook and stir until the sausage is cooked through
  • deglaze the pan with ½ cup of water or so and scrape up all the great browned bits
  • pour all the sausage mix in the slow cooker and stir to combine
  • add the rest of the ingredients except the salt and cook for another hour or so
  • taste for salt after about ½ hour or so and salt as needed to taste
