- 2 Tablespoons rice wine vinegar
- 1 Tablespoon grated ginger
- 4 cloves of garlic minced
- ¼ teaspoon crushed red pepper
- 2 Tablespoon soy sauce
- 2 Tablespoons whole grain mustard
- ¼ teaspoon black pepper
- ½ teaspoon salt
- 1 cup apricot preserves
- 2 - 2.5 lbs boneless, skinless chicken thighs (can also use breasts if you prefer)
- ½ cup cilantro
Combine all ingredients except chicken and cilantro in a bowl and whisk together until completely combined
Place chicken in crock pot
Pour apricot mixture over the top
Cook on high for 4 hours, or low for 8 hours
chop the cilantro and sprinkle over the chicken
Serve over hot rice or pasta
