Ingredients

Cake

  • 1 cup water
  • 1 cup butter
  • 3 tbsp unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sour cream
  • 2 large eggs slightly beaten
  • 1 tsp vanilla extract

Frosting

  • 3/4 cup milk
  • 6 tbsp unsweetened cocoa powder
  • 1 cup butter
  • 7 1/2 cups powdered sugar

Topping

  • 10 ounces mini marshmallows
  • 1 cup chopped pecans

Instructions

  • Preheat the oven to 350°F
  • Spray an 18x13 inch jelly roll pan with non-stick cooking spray and set aside
  • In a large mixing bowl, whisk together flour, sugar, baking soda, and salt

  • In a small bowl, whisk together sour cream, eggs, and vanilla extract

  • Add the wet mixture to the dry ingredients and mix just until combined

  • In a medium saucepan, combine water, butter, and cocoa powder
  • Bring the mixture to a boil over medium-high heat

  • Pour the hot cocoa mixture into the batter and whisk until smooth
  • Pour the batter into the prepared pan and spread it out evenly

  • Bake for 15 to 18 minutes or until a toothpick inserted in the center comes out clean

  • While the cake is baking, prepare the frosting
  • In a medium saucepan, combine milk, cocoa powder, and butter

  • In a large bowl, combine the powdered sugar and the hot cocoa mixture

  • Use a hand mixer if needed to remove any lumps
  • Pour half of the hot frosting over the hot cake and spread evenly
