Pan-Fried Bacon-Wrapped Dates

Ingredients

  • 20 dates
  • 1/2 cup goat cheese
  • 10 strips bacon

Instructions

  • if you plan to put a toothpick in these to keep them from popping open drop those toothpicks in a cup of water right off the bat--see notes!
  • preheat the oven to 400°
  • pit the dates if they're not already pitted by cutting them lengthwise and pulling the pit out
  • stuff each date with a little goat cheese

  • wrap each date in bacon

    Wrap stuffed dates in bacon.
  • put a soaked toothpick in them if you're using them
  • lay seam side down in a frying pan
  • pan-fry for 2-3 minutes on each side
  • then slide the pan in the oven to continue for 8-10 minutes cooking until the bacon is crispy and the goat cheese is hot
  • serve while still hot

Notes

If you plan to use toothpicks they should be soaked in water for a couple of minutes before being cooked. They can brown and burn and even catch on fire if they're not soaked in water.
