Ingredients

Pie Crust Ingredients

  • 1 1/4 cups all purpose flour
  • 1/4 tsp salt add an extra pinch if your butter is unsalted
  • 1/2 tsp sugar
  • 1/2 cup cold butter
  • 2 to 4 TBSP cold water

Pecan Pie Ingredients

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1 TBSP all-purpose flour
  • pinch salt
  • 2 TBSP milk
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup pecans

Instructions

Make the Pie Crust

  • In the bowl of a food processor whirl the flour, salt and sugar together
  • Cut the butter in chunks, drop it in the food processor and pulse on and off until it resembles fine crumbs
  • Start with the smallest amount of water and drizzle it in while the food processor is running
  • If the dough clumps up it's done, if it doesn't come together it needs more water
  • Pat the dough a bit flat, wrap it and chill at least one hour

Make The Pecan Pie

  • Preheat oven to 375˚
  • Melt the butter and set it to cool, it needs to be melted but not hot
  • Sprinkle a little flour on a clean counter and roll out the chilled dough
  • Add a sprinkle of flour in the pie pan and lay the rolled out pie crust in the pan, fit it in the pie pan
  • Trim the extra pie dough about 1/2 inch beyond the edge of the pie pan
  • Take the extra pie dough and fold it under the edge of the crust on the edge of the pan
  • Pinch or flute the crust of the pie on the rim of the pie pan
  • Set the pie pan in the fridge to chill for 15 minutes
  • Mix the sugars, flour, and salt together, set aside
  • Mix the cooled butter, milk, eggs, and vanilla together
  • Pour over the sugar mixture and beat well
  • Fold in pecans
  • Pour in prepared pie crust
  • Bake at 375˚ for 40-50 minutes until the pie is set and the crust is nicely browned

Notes

  • Short on time? Use a prepared pie crust from the refrigerated section or a frozen pie crust and skip the crust steps. They all work!!
  • Use a 9-inch pie pan for best results, no deep dish pie pans are needed!
