Old Fashioned Homemade Noodles

Homemade noodles made easy! This Old Fashioned Homemade Egg Noodles recipe is surprisingly simple and perfect for beginners.

Ingredients

  • 2 1/3 cup all purpose flour
  • 1 teaspoon salt
  • 2 eggs
  • 1/3 cup water
  • 1 teaspoon oil

Instructions

  • mix the flour and salt together
  • make a well in the center drop in the eggs, water, and oil
  • stir until a dough forms
  • knead 1 minute by machine, or 5 minutes by hand, knead the dough until it's soft
  • roll the dough in a ball, cover with plastic wrap, refrigerate 30 minutes
  • To Roll Out Using a Rolling Pin:
    dust a clean countertop with a little flour
    divide the dough into 4 parts, cover three with a damp paper towel while working with one ball
    hand flatten one dough ball
    dust your rolling pin with flour then roll the dough out until it's your desired thickness
    dust the cut noodles with flour and set aside
  • To Roll Out By a Stand-Alone Machine:
    simply follow the manufacturer's directions
    divide the dough into 4 parts, cover three with a damp paper towel while working with one ball
    roll big sheets first, start thick and roll them thinner
    cut by hand or if your machine has blades you can machine cut the noodles as well, dust with flour as needed
  • To Roll Out Using a Mixer Attachment: it's really the same process
    divide the dough, dust with flour to keep it from sticking
    roll out in long sheets, start thick and make them thinner
    dust the sheet with flour, set it aside
    repeat with remaining dough
    use the cutting tool on your mixer if you have one or cut by hand
  • cut the noodles with a pizza wheel or paring knife if doing it by hand, dust the cut noodles with flour to prevent them from sticking to each other
  • for best results let the cut noodles rest for at least 15 minutes before cooking
  • bring your pot of soup to a high simmer, take handfuls of fresh noodles, shake off the flour, add the noodles to the soup, stir after each addition of noodles
  • cook stirring occasionally for 8-12 minutes, start checking for doneness at the five minute mark by tasting a noodle if it's uncooked you'll know it because it will taste like raw flour and feel weird in your mouth, a cooked noodle will taste delicious, and be soft
    remember noodles rolled out very thin, and cut thinly may be done in as little as 5 minutes or even sooner so start checking as early as you need to so you avoid over cooking your noodles
