  • 1 Tablespoon oil
  • 24 ounces stew meat
  • 1 onion diced
  • 1 stalk of celery diced
  • 8 oz. mushrooms
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 4 cloves garlic minced
  • 1 teaspoon paprika
  • 1 ½ teaspoons Italian seasoning
  • 2 cups red potatoes cut to roughly ¾ inch chunks
  • 1 12 oz. bag mixed frozen vegetables peas, carrots, corn, green beans
  • 1 8 oz. can tomato sauce
  • 32 oz. beef broth

Instructions

  • Heat oil in a Dutch oven over medium, and add meat, onion, and celery

  • Add remaining ingredients to pot, cover, and bring to a simmer

  • Simmer until potatoes are just tender.

  • Remove from heat and serve hot

Note: You can simmer uncovered if you would like some of the beef broth to steam off and make a thicker stew.
