Mandarin Orange Salad
Drizzled with an easy, sweet orange dressing this mandarin orange salad has a
pop of flavor in every bite. With juicy bits of orange paired with sweet, crunchy almonds you’ll be
hard-pressed not to make it again and again.

Salad:
- ½ cup almonds sliced
- 2 Tablespoons sugar
- 5 oz. spring mix
- 3-4 green onions sliced
- 8.5 ounces can mandarin oranges drained
- ½ cup craisins raisins, or goji berries
Dressing:
- 1/3 cup orange juice about 2 oranges worth
- 3 Tablespoons olive oil
- 2 Tablespoons sugar or honey
- 1 Tablespoon apple cider vinegar
- 1 Tablespoon poppy seeds
- ¼ teaspoon salt
- ½ teaspoon dijon mustard
Heat a small, heavy bottomed pan over medium heat until piping hot
Add almonds and 2 tablespoons of sugar, and stir constantly until sugar has melted and coated the almonds
Continue cooking until lightly toasted
Remove from heat immediately, and set aside to cool
In a small jar, combine dressing ingredients, top with lid, and shake until combined, Alternatively, combine them in a bowl and whisk together
Place spring mix, green onions, craisins, oranges, and almonds in a bowl, drizzle with dressing, and serve.
Note: I would actually only combine as much salad as you’ll eat in one sitting, or combine on each individual plate in order to keep the almonds from getting soggy.
