Instant Pot Mashed Potatoes

- 3 pounds yukon gold potatoes OR your favorite mashing potato peeled and diced
- water
- 1 teaspoon salt
- 1/4 cup butter
- 1/2 cup milk or cream
- salt and pepper to taste
- parsley for garnish is desired
plug in the Instant Pot
add the peeled diced potatoes to the inner pot
cover with water
sprinkle with one teaspoon of salt
add the lid, turn the knob to seal, set the pot for 8 minutes manual high
When its done cooking and has beeped immediately release the pressure, if it sputters close it, wait a minute and try again
once the pressure is released drain the potatoes and add them back to the inner pot for mashing
add the butter and milk or cream, mashed together completely using a potato masher OR a ricer OR a food mill
if you feel like you need more milk you can add it here
add salt and pepper to taste
