Chopped Pecan Pie

A classic old fashioned pecan pie made without corn syrup. It's extra delicious because it's made with chopped pecans that give every slice the perfect mix of gooey and crunchy.

Ingredients

  • 1 prepared crust for a single crust pie
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1 1/2 tbsp all purpose flour
  • pinch of salt
  • 2 eggs
  • 2 tbsp milk or half and half
  • 1 tsp vanilla or vanilla paste
  • 2 cups pecan halves

Instructions

  • Preheat the oven to 375°F
  • Melt the butter and set aside to cool
  • Sprinkle a little flour in the bottom of the pie pan
  • Fit the pie crust into a regular pie pan not deep dish
  • Trim and flute the edges as desired
  • Place the pie pan in the fridge to chill
  • Chop the pecans on a cutting board they do not need to be chopped fine set aside
  • Whisk together the brown sugar white sugar flour and salt set aside
  • In another bowl mix the eggs, slightly cooled butter, milk, and vanilla until smooth, do not whip or beat
  • Pour the wet ingredients over the dry ingredients and stir to combine without beating
  • Stir in the chopped pecans
  • Place the chilled pie pan on a baking sheet
  • Pour the pecan mixture into the pie crust
  • Bake for 45 to 55 minutes or until the pie is browned and just slightly jiggly in the center
  • Cool completely before serving
  • Store at room temperature for 24 hours then cover and refrigerate for up to 3 days

Notes

For the best texture make sure the butter is slightly cooled before adding it to the eggs.
