Chocolate No Bake Cookies

These old fashioned no bakes are made with an easy to find mystery ingredient that makes them nut-free. Their chewy texture and chocolate flavor are everything you want in a No-Bake!

Ingredients

  • 1/3 cup butter softened butter melts quickly
  • 16 marshmallows or 160 mini marshmallows
  • 1 cup chocolate chips
  • 1 tsp vanilla extract
  • 1 pinch salt maybe two if your butter is unsalted
  • 2 cups rolled oats
  • 1 cup sweetened and moistened coconut flakes

Instructions

  • line a baking sheet with parchment paper and set aside
  • in a heavy bottom sauce pan or dutch over melt the butter, marshmallows, and chocolate chips together, if your stove runs hot turn down the heat you don't need a rolling boil
  • keep stirring with a wooden spoon until melted and smooth
    Melt the butter, chocolate chips, and marshmallows.
  • remove from the heat and add the vanilla and salt
  • mix in the oats and coconut
    Coconut and rolled oats mixing in the no bake cookies.
  • drop by spoonfuls on the prepared baking sheets, making 36 cookies, you can ALSO make them bigger, just know the calorie count will be different per cookie
    Drop by spoonfuls on the prepared sheet.
  • chill 2-3 hours until set, then store in an airtight container in the fridge
