Wearing gloves, slice each jalapeño in half lengthwise and remove the seeds
Combine cheddar cheese, cream cheese, mayonnaise, bacon, pickled jalapeños, red onion, ½ tsp garlic salt, and ¼ tsp paprika in a medium bowl. Stir until well mixed
In a separate small bowl, mix panko breadcrumbs with the remaining ½ tsp garlic salt and ¼ tsp paprika
Fill each jalapeño half with the cheese mixture, pressing it in firmly
Sprinkle the filled jalapeños evenly with the panko mixture
Arrange 6-8 jalapeño poppers in the air fryer basket, leaving space between each (work in batches if needed)
Air fry at 380°F (193°C) for 6-7 minutes until golden and crispy
Transfer cooked poppers to the prepared baking sheet in the warm oven while finishing the remaining batches
Serve immediately with ranch dressing, if desired
