Rhubarb Cake with Streusel

Ingredients

Streusel

  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
  • 6 TBSP cold butter

Rhubarb Cake

  • 1/2 cup soft butter
  • 1 cup sugar
  • 1 tsp vanilla
  • 3 eggs
  • 1 cup + 1 TBSP all-purpose flour--divided
  • 1/2 tsp baking powder
  • 1/2 tsp salt add an extra pinch if your butter is unsalted
  • 1 1/2 cups thinly chopped rhubarb

Instructions

  • make the streusel by combining the dry ingredients together
  • then cut the butter in until it combined and the mixture makes big crumbs
  • refrigerate until ready to use
  • preheat the oven to 350˚
  • butter a 10 cast-iron skillet
  • beat the butter and sugar together
  • beat in the vanilla
  • then beat in the eggs one at a time
  • stir the 1 cup of flour, baking powder, and salt together
  • then stir into the butter mixture
  • toss the rhubarb with the remaining Tablespoon of flour
  • then stir into the cake batter
  • scrape the batter into the skillet or prepared baking pan
  • sprinkle the streusel over the top of the cake and bake for 40 minutes or until a cake tester comes out clean
  • serve warm or cool with ice cream or whipped topping

Notes

You can use ANY 1 1/2 quart baking pan
