Creamed Spinach with Feta and Walnuts

This recipe for Creamed Spinach with Feta and Walnuts is like all the deliciousness of Spanakopita without the fuss and carbs of phyllo dough. It's like a Low Carb Spanakopita side dish, perfect for diabetic home, type one or type two! And it takes 10 minutes to make, not an hour or more which means you can make a low carb side dish while your steak is grilling.

Ingredients

  • 1/4 cups chopped walnuts
  • 2 cloves garlic
  • 1 pound baby spinach cleaned and ready to use
  • 1/2+1 TBSP cup crumbled feta

Instructions

  • toast walnuts in a dry frying pan over medium/medium high heat-dont let them burn
  • while the walnuts are toasting, mince the garlic
  • once toasted remove to a plate and set aside
  • wipe out the frying pan add the garlic to the hot pan and cook for 30 seconds
  • then add the spinach, stir until it wilts, if your pan is over filled follow the directions below for cooking in two batches
  • tilt the pan and press lightly with a spatula to remove any excess water
  • once drained add 1/2 feta and stir to combine
  • once feta begins to melt and create a light creamy sauce remove from the heat
  • top with toasted walnuts and extra TBSP of feta stir if desired and serve

Notes

you may want to cook the spinach in two batches if you're using a smaller pan, simply add the garlic pan and then half the spinach, then remove it to another dish and wilt the second half of the spinach, return it all to the pan and press to remove excess water
also add more feta if you like it only gets creamier and MORE delicious the more you add
