Course: Appetizer, Snack
Cuisine: American, Grilling, Keto, Paleo, Whole30
Servings: 4 servings
- 1 cup raw almonds
- 1/2 TBSP coconut oil can use olive as well
- 1/2 tsp salt fleur de sel is nice but not necessary
preheat the grill for 15 minutes add a Smokin O and a heavy cast iron skillet halfway through preheat time-do not put the Smokin O' in the skillet just set it on the grill grate over a burner so it starts to burn
after 15 minutes turn off the burner under the skillet, reduce the heat to medium/low on the other burner/s
add the oil and let it warm
add the nuts and stir
cover the grill and let them smoke and roast for 8-10 minutes, stirring every minute or so
don't let them burn, if the grill seems too hot you can turn the heat down on any burners still being used
keep stirring and letting them smoke until the nuts are toasty brown
remove from the heat and toss with the salt
let them cool a bit and they are ready to eat
don't worry if they look a bit oily, they will lose that sheen after a while as the oil is pulled into the nuts
