Ingredients

  • 1 cup raw almonds
  • 1/2 TBSP coconut oil can use olive as well
  • 1/2 tsp salt fleur de sel is nice but not necessary

Instructions

  • preheat the grill for 15 minutes add a Smokin O and a heavy cast iron skillet halfway through preheat time-do not put the Smokin O' in the skillet just set it on the grill grate over a burner so it starts to burn
  • after 15 minutes turn off the burner under the skillet, reduce the heat to medium/low on the other burner/s
  • add the oil and let it warm
  • add the nuts and stir
  • cover the grill and let them smoke and roast for 8-10 minutes, stirring every minute or so
  • don't let them burn, if the grill seems too hot you can turn the heat down on any burners still being used
  • keep stirring and letting them smoke until the nuts are toasty brown
  • remove from the heat and toss with the salt
  • let them cool a bit and they are ready to eat
  • don't worry if they look a bit oily, they will lose that sheen after a while as the oil is pulled into the nuts
